What breaks. What we fix.

Hoshizaki KM cubers earn their reputation for lasting, but our local water is rough on them. Most of the East Bay and Tri-Valley runs hard water, and mineral scale coats the evaporator plate quicker than the service manual suggests. The first sign is usually ice output dropping off, maybe 20 percent below the daily rating on the spec plate. When that happens, scale is where we start looking before anything else.

The call we get most often is a hot-gas valve stuck the wrong way. If it hangs open or won’t open at all, the harvest cycle never finishes, production quits, and the machine just runs and runs. We isolate the valve, check coil resistance against spec, and swap in the OEM valve. We’ve seen too many aftermarket coils fail early on these units, so we don’t use them.

KM water pumps tend to give out around year seven. The bearing goes, you get a loud pump at startup, and then the unit throws an intermittent high-amp fault even while it’s still making ice. We replace the whole pump assembly rather than just the motor, because once the bearing fails the impeller usually cracks too. Replacing half of it is a callback waiting to happen.

Prep tables and sushi cases use a discharge-air thermistor that drifts as it ages. When it does, the box holds 6 to 8 degrees warm. A sushi case meant for 33 ends up sitting at 41, which is a health-code violation before a customer ever notices. We keep calibrated thermistors on the truck so it’s a same-visit fix. Undercounter ice makers throw a high-temp alarm when the condenser packs with dust. Same routine as the bigger machines: clean the coil, check the fan motor, swap the filter.

We service Hoshizaki as an independent shop. We’re not a factory dealer and we don’t claim to be. What we bring is honest diagnosis and parts we stock on the truck. The diagnostic is a flat $75, and we waive it when you go ahead with the repair. You get a written quote before we touch anything, so there are no surprises on the invoice.

Sealed-system work, if a machine needs it, is done in-house. We’re EPA Section 608 certified (EPA #1279674151528) for refrigerant recovery, evacuation, and weigh-in, and we’re licensed in California under CSLB #1136642. If your Hoshizaki is on a regular run, we’ll set up a flat-rate twice-yearly maintenance visit to stay ahead of scale and worn pumps.

    Scale on the evap plate, almost guaranteed. Bay Area water runs hard and the manual's deliming interval is too generous. We delime, verify production, and put you on a schedule.
