Door hinge cartridge and gasket worn out from constant swing. A Millbrae line cabinet gets its door yanked all shift. The Traulsen cartridge hinge wears, the door drops, and the gasket stops sealing at the bottom corner. Then the compressor runs nonstop and the box sweats. We rebuild the hinge, set the door square, and fit a new magnetic gasket so it seals cold again.
Blast chiller not pulling down to temp. Kitchens near the airport that prep in volume run Traulsen blast chillers, and the common call is a cycle that stalls before it hits the target. It is often a fouled condenser, a weak evaporator fan, or a chamber probe reading wrong.
