On a Perlick BBS glass-door back bar, the most common cause we find in Millbrae kitchens is a condenser coil packed with airborne grease and dust. Broadway's seafood and dim sum lines put a lot of oil in the air, and it settles on the coil. Head pressure climbs, the compressor short cycles, and the box will not hold below 40. We pull and comb the coil, check the condenser fan motor, and test the start components.
Forced-air undercounter icing over. Perlick Signature Series HP24 and HP48 undercounters use a forced-air evaporator. When the defrost termination fails or the magnetic door gasket tears and lets humid air in, the coil freezes solid and the fan stalls. The unit reads cold at the controller but the food is warm. We replace the gasket, test the defrost heater and controller, and clear the drain so it does not refreeze.
Foamy pours from the draft tower. On a Perlick 630SS keg box with a glycol tower, foam usually traces back to a warm trunk line or a glycol bath temperature that has drifted high, plus a dirty 690SS flow-control faucet. We check the glycol pump and bath temperature, inspect the FOB detector, and rebuild the faucets so the pour settles instead of running all head.
