Delfield prep table cold rail not holding pans at temp. On Delfield 4400 and N8 series prep tables, the refrigerated rail stops keeping the top pans cold while the base cabinet still reads fine. Usually it is a frosted evaporator behind the rail, a weak rail fan, or a clogged condensate drain wicking humidity into the wells. We clear the drain, check the fan and coil, and set the pans back into safe range so your cold line holds through the lunch rush.
Delfield reach-in evaporator icing and worn door gaskets. Delfield GBR and Specification Line reach-ins ice up the evaporator when the door gasket tears or the defrost cycle fails. Warm Millbrae kitchen air pulls in through a bad gasket, the coil freezes solid, and airflow drops until the box climbs out of temp. We replace the magnetic gasket, verify the defrost heater and timer, and clear the ice so the cabinet pulls down and stays there.

The compressor then runs long, the box creeps up, and eventually the unit trips on overload. We pull and clean the condenser, check the fan motor and refrigerant charge, and confirm the compressor is not drawing high amps before we call it fixed.
